Steps: 1. Chop onions, garlic and tomatoes. 2. Slice eggplants and marinate with salt, pepper and olive oil. 3. Roast in an oven at 180 degrees for 12 mins, and then set aside. 4. Fry out garlic and onions till golden brown. 5. Add in Quorn Mince 6. Then add tomato paste and water 7. Once mixture is cooked through set aside 8. For the Bechamel, add butter and flour till mixture is cooked 9. Add milk and stir till sauce thickens 10. Layer eggplant and cooked mince alternatively. 11. Finish off with the Bechamel. 12. Bake for another 20 mins till golden brown.
